All these dithering options, what do they mean??

is there a definitive guide for the dither methods? like, why are they labeled as "fast" and "slow"? what is the difference between them?

Try having a look at https://en.wikipedia.org/wiki/Dither or https://theproaudiofiles.com/dither/ which explain dithering in audio terms. As I understand it, it basically can be useful when downsampling higher resolution audio data to play back at a lower resoltuon (by adding random data to the samples to make the downscaling sound more natural).
